Kombucha Pilot

1/2 gallon water
1/2 c sugar
5 packets Stash ginger peach tea 
1 week's fermentation time. 


One bottle fermented 4 extra days with a splash if ginger lemon euchanachia juice and 1 chunk candied ginger. BOOM!!!

Ginger Apple (or Pear!) with Almonds

Ingredients for 1 serving: 
1 Apple or pear (choose an apple that is sweet when warmed or baked)
1/8 to 1/4 c sliced almonds
2 tsp pumpkin spice (or cinnamon)
Small chunk of candied ginger (this, in my opinion, makes this awesome!)
1 T coconut oil (you really can use any oil of your choice)

Heat all ingredients until apple or pear is tender to your liking... Yeah, that is a nice spatula.
 
Viola! A friend suggested adding goat cheese to this... clearly, you can make your own life choices ;)

Blueberry Cream Cheese Oatmeal Bake

This is AmAzing! Yeah I said it.
I've made this a couple of different ways and both are great... So it's up to you.

Ingredients 
1.5 c old fashioned oats
1.25 c milk (I used skim)
3 cage free eggs 
1 tsp vanilla
1-2 tsp honey... Up for debate on the sweetness.

WHISK!

Now gently mix in 0.5 c FRESH blueberries and 4 oz cream cheese

Pour into a greased square pan, cover, and let sit in the regrigerator about 8 hours or over night... just let the oats soak up the goodies ;) Bake at 350 for about 30-35 minutes... until done... like, duh






Extra Protein Version
1.5 c old fashioned oats
1.25 soy milk (it's just what I had available, but use whatever milk you want... It's a free country)
1 cage-free egg
2 egg whites
1 scoop of vanilla whey protein... I used OhYeah! http://www.ohyeahnutrition.com/
1 tsp vanilla
(no need for honey on this one, but you may added it... Up to you)

WHISK!

Dark Chocolate Banana Fig Cake

CAKE:
Blend - 2 over ripe bananas and a few dried figs
Mix with -
1/2 C plain Greek yogurt
1 C quinoa flakes
2 cage-free eggs
1/2 tsp baking powder
1/4 tsp salt

FROSTING
Mix-
1/2 C vanilla casein
About 1/2 C Greek plain yogurt (mix to frosting consistency)
Confection stevia (blend 1 tsp stevia with 1 tsp corn starch)

Kcal: 250
CHO:35
PRO:17
FAT:5

Banana Pecan "Mufflins"

Well it's Mifflin Street Block party outside my door... and instead of partaking in that rubbish, I made "Mufflins". They are GLORIOUS!

Preheat oven to 350

Mix together:
1 c Egg whites
2 T Coconut flour
1/3 c Amaranth flour
1 scoop Whey protein unflavored... I used this one
1/2 c Greek yogurt
1 T Shredded coconut
1 T Stevia (granulated)
1 tsp Baking powder
1/4 c crushed Freezer dried bananas

Omelette Muffins

You can do these several ways, but I did these like this:
1/4c liquid egg whites in ea. space
Added vegetables (thawed or fresh!)
Spices of your liking bc this is about you yo!

Bake @ 350° for 15-18 min

At about 10 min I sprinkled some parmesan cheese on top!

One muffin:
Approx 80 cal
3g CHO
6g PRO
0g FAT
BOOM!
